starting with focaccia

We're back in North Loop, this time in the relatively new, hub area named North Loop Green. There you'll find italian restaurant Salt & Flour, which focuses on handmade pastas and pizzas. What makes their pizzas unique to North Loop and the broader metro is their focaccia crust. We ordered four of their specialties to discover which fall flat and which rise to the occasion.

Salt & Flour

Toppings: Mozzarella, Fontina, Pepperoni, Salami, Calabrian Peppers

Highlights: great texture and meat quality

Lowlights: poorly distributed and placed toppings, a little too rich

Spicy Sota

Toppings: Jalapeño Spam, Japanese BBQ Sauce, Pineapple, Green Onion, Mozzarella, Hot Peppers, and Chili Crunch

Lowlights: barbecue sauce is overpowering and not that good

White Rabbit

Toppings: Braised Rabbit, Giardiniera, Artichoke, White Sauce, Mozzarella, Oregano, Aleppo

Highlights: great texture and mix of giardiniera and vegetables

Lowlights: low on rabbit meat, acidic

Funghi

Toppings: Foraged Wild Mushrooms, Truffle, Pecorino, Tomato, Garlic, Oregano

Highlights: excellent mushroom flavor and texture

Lowlights: cheese, salt, and truffle need minor rebalancing to elevate the pizza above great
