In the evening, tucked inside of Turtle Bread bakery on Chicago Ave in south Minneapolis, you'll find more than pastries inside. Pizza Biga operates and bakes pizzas in their wood-fired oven. Offering a variety of sauce types, we ordered a few different styles to learn whether Pizza Biga is worth a trip.

Gringo
Toppings: red sauce, red onion, pepperoni, bacon, jalapeno, mozzarella
Highlights: caramelized crunch on both pepperoni and crust
Lowlights: sauce is a little sweet, and too thin and watery

Toppings: red sauce, red onion, mushrooms, roasted red pepper, capicola, mozzarella
Highlights: good aroma
Lowlights: soggy and sloppy

Toppings: olive oil, green olives, mushroom, fresh mozzarella, basil, chili oil
Highlights: great aroma and texture, sauceless pizza done very well as moisture is still there

Dan's Balsamic
Toppings: balsamic vinaigrette, sausage, spinach, capicola, red onion mozzarella
Highlights: balsamic is delicious with balanced acidity
Lowlights: uneven toppings so some slices are missing ingredients or have too many of one
